Melon salad for summer solstice 2025

Summer solstice is today – the longest day to savor fruitylicious treats, imo 🙂

I started off my morning bright and early, with a trip to pick up my latest Azure Standard order (my previous posts referencing Azure Standard can be found here, here and here) I came home, had some coffee, and started doing chores around the house and garden. I also baked some bread.

Summer is here in all its splendor, and I am sooo happy! I have been thoroughly enjoying the warm, sunshine-packed weather, trying to make each moment count, and to expand each second by making lifetime memories. Our garden has been doing great after the recent rains, and the blackcurrant bushes are producing again, for the second year in a row!

Like last year, I wanted to capture the magical taste of our small blackcurrant harvest in a variety of desserts, starting with the simplest exploration of summer flavors: a fruit salad.

The salad featured here includes watermelon, honeydew melon, apricots, blueberry&vanilla goat cheese, and mint. Topped with homegrown blackcurrants, cinnamon roasted almonds, and a drizzle of Ponti Cherry Condiment (previously reviewed here), this colorful treat reminds me of the stunning seasonal beauty outside my window, and invites me through its taste and texture to go outside, to play, to love, to live. I am cherishing every moment, and hoping that sunny days never end!
