An apple with a surprise inside? Yes, please!
May is coming to an end, and what a month it’s been! Between trips to various food-related events, I had just enough time to do some sourdough baking, and to experiment with beloved family recipes I had been meaning to revamp, such as stuffed apples. I was recently asked by Sfoglini to use their pasta in a creative, non-traditional fashion, and my mind went to these apples, usually filled with ground nuts, jam or preserve, and cinnamon. I thought adding Sfoglini to the mix would be a lot of fun 🙂
Founded in Brooklyn in 2012, Sfoglini employ Italian techniques and North American ingredients to make high-quality pasta. Their pastas are bronze-cut to give them a rough texture that helps sauce stick, and slow dried at a low temperature to preserve flavor and nutrients. All Sfoglini pastas are made and packaged in the US, and are certified organic, and therefore non-GMO.
You may remember me using Sfoglini Trumpets to make a delicious slow cooker dish last winter. On this occasion, I worked with Sfoglini’s super fun Zucca pasta shape.

Plump and round as the end of a zucchini or an open pumpkin, Sfoglini Zucca “offers a pasta pocket that fills up with any red or creamy sauce to deliver a perfect juicy bite.” I thought Zucca would work great to soak up the goodness of my apple filling, and it would be a delicious and wholesome surprise element inside the aromatic fruits.

I cooked the Zucca pasta al dente, following the instructions on the package, and then I added it to the homemade strawberry jam, ground walnut & cinnamon apple filling. I baked the apples slowly in the preheated oven, checking for doneness from time to time (they should be soft and the skin should blister to reveal runny juices). I served the apples with some leftover rose petal preserve I had in the fridge, chopped peanuts for texture, fresh mint, and edible flowers. So fresh!

Sfoglini Zucca were exceptional in this preparation, their shape absorbing the fragrant silky sweetness of the jam and nut combination to deliver delicious, sweet tooth-satisfying bliss.

I am excited to recommend Sfoglini pasta, and I invite you to purchase their delicious varieties using this link. They also have a Pasta Club, perfect to keep your pantry stocked with artisan pasta, and to get a first taste of Sfoglini’s latest recipes. This subscription would also make an excellent gift. Additional gift sets are available for purchase here.

I thoroughly enjoyed working with Sfoglini again, and I look forward to continuing using them in the future. I am a big fan of their approach – an inspiring fusion of high quality American grains and artisan Italian methods – and I appreciate their commitment to holistic principles, from planting the wheat to packing the pasta. Their story resonates with me, and their organic pastas are delicious in a variety of preparations, both savory and sweet.
