Avocado in sandwiches is all the rave these days thanks to late Australian chef Bill Granger, and sky is the limit when it comes to delicious innovation. I find this type of sandwich particularly suited to the addition of edible flowers. Below you have a summer open-faced sandwich with avocado, goat cheese, homegrown Swiss chard, cherry tomatoes, chives, and edible flowers.
Creamy smashed avocado and goat cheese are mixed with finely chopped chives and lemon juice, topped with more cheese and an abundance of fresh crunchy chard, with oregano flowers, wild yellow wood sorrel (safe to eat in small quantities) and nasturtium, pink dianthus and calendula petals. A sprinkle of everything bagel seasoning, and lunch is ready!
In winter, I recommend the use of carnations and roses to beautify sandwiches. Always be sure to choose a sturdy, high quality bread, able to withhold the bounty of deliciousness. I usually make my own bread, and when I buy, I choose La Brea Bakery breads (you can read my review of their fabulous breads here and here)
