There’s nothing better to warm you up on a cold fall day than a bowl of soup. Piping hot and enticing, it is a bowl of heaven to those of us who are in need of nourishment and comfort. Chef inside the Box review: fully cooked delicious dinners ready in minutes!

I just love Thursdays. Why? Because Thursdays are cooking days! Utensils on hand and spice rack at the ready, every Thursday morning I go into the kitchen and labor for hours, and this enchanted day passes by quickly, like in a dream. Still, with the schedule being as busy as ever, finding time to spend with friends & family or to research very particular recipe ideas can be a luxury: week after week is spent doing projects for work and cooking “standard” food, with very little else to report. It’s time to make zucchini cakes!

This is my mom’s recipe and it’s a big hit in our house. My husband loves these savory cakes and eats them “bathed” in plenty of sour cream. Meanwhile, I eat them on their own and quite a few at a time, sometimes late at night, when the pregnancy cravings kick in. I think this is a great comfort food: served hot, straight from the pan, the cakes are fresh, light and moist and exhibit simplicity and earthiness. I have found that simple is in many case better, and this is why I like to let the flavors shine through and to talk for themselves in this dish. In my experience, eating dinner is the last thing you want to do when you get home late, on a freezing cold night. You just want to shower and cuddle up under the blanket, hoping that spring would be upon you soon (if only this were true!). Still, on this cold Chicago weather, what can be more enticing than a hot panino, oozing cheesy goodness, nutritious, and quick to prepare? I think panini are the perfect quick comfort food: You can make a healthy meal out of only a few ingredients in very little time.
